
We had a London Broil for supper last night with a baked potato. I wanted a salad to start that was cool and refreshing but also a little spicy. So this is what I came up with: INGREDIENTS: Sweet Butter Lettuce Romaine Lettuce 1 small zucchini ΒΌ of a small watermelon 2 small chili peppers 4-6 basil leaves 4-6 mint leaves 2 medium carrots Asiago or Parmigiano-Reggiano Cheese Extra Virgin Olive Oil Balsamic Vinegar Take your freshly washed lettuce and rip into small pieces. Well it has been just over a month since my last post. A busy time of year and with holidays and the need to recharge the time was well spent. The past years I have had my gardens to tend to to relax and have some fun. This year is the first in many that I haven't had a garden so I needed something else to do to relax. I love to cook and experiment with food but I don't get many opportunities to do it. When I do I usually get really good results. Friday, Mrs. EB had a going away party for someone at her work and it was up to each of them to bring an appetizer. I took it upon myself to come up with something for her.
